If you have one socket and six cores per socket then you have 12 logical processors with hyperthreading. A physical core is just that: the phsical hardware. You have six cores per socket. What hyperthreading does is present each core as two logical cores to your system. Each logical proc should be treated like any other core. Assigning them to your VMs is really dependent on what you need for each one. My print server is running on 1 core. It doesn't need much more than that to operate. Our SQL server is running on more because it needs the extra processing power. Just think about what you would want if each vm were a physical machine with a dedicated purpose. Does it need 4 cores, or can it get by with 2 or even 1?
